This is the ideal program for the busy professional chefs and the student chefs. This program is geared specifically to accommodate chefs to learn first hand the culinary arts of China. While also exploring the Chinese culture and history, this new knowledge can enhance the chefs’ culinary performance enabling chefs to share their new experience back home.

Here’s a glimpse of the Professional Training Program.

The Professional Training Program: Itinerary

--Classes are offered each week--

1. TRAVEL

      Day 1 - Flight from US to CHINA 

     Day 2 - You’ll arrive Hong Kong in the evening or according to your flight schedule.Then you will be transported by car (about an hour ride) across the border to the cosmopolitan city of Shenzhen. You’ll settle into comfortable accommodations, within walking distance from CAC.

2. INTENSE, HANDS-ON CLASSES: *

                                  

5 days of expert instruction from our distinguished culinary staff and guest chef instructors, totaling 25 total continuing education hours, in CAC’s state-of-the-art training facility. In addition, on the last day of class you are grouped into teams to test the skills learnt to prepare a gala dinner **

   Day 3 – (B,L,D) Breakfast; Orientation at CAC; visit a lively market to view unusual meats, seafood, produce, fruits, spices and other exotic ingredients; Dim Sum Welcoming Lunch; become acquainted with Chinese cooking tools and learn to identify and use special Asian ingredients.

Evening: Free time, followed by no host cocktails. Dinner with live music at SensAsian.

   Day 4 – (B,L,D) Breakfast; master indispensable Chinese knife skills and techniques, lunch; discover wok techniques, learn about oil blanching, red cooking and the secrets of starch.

Evening: Rejuvenate sore muscles, strained backs and tired hands and feet with a trip to a massage parlor. Then enjoy dinner and a cultural show.

   Day 5 – (B,L,D) Breakfast; Learn about regional cooking (Cantonese) and how to create authentic-tasting Chinese Seafood specialties; lunch; continue regional cooking lessons.

Evening: Shop and discover why Shenzhen is famous throughout Southeast Asia as a shopper’s paradise, or unwind with a game of golf at top-rated Long Island Golf Course.

Then enjoy a fabulous seafood dinner.

    Day 6 – (B,L,D) Breakfast; discover the secrets to Beijing duck preparation and noodle and dumpling making; lunch; visit to the culturally instructive theme park, “Splendid China”; learn to create Shanghai dumplings and popular “Drunken” Chicken.

   Day 7 – (B,L,D) Rejuvenate your body with a fresh-air Tai Chi class; Dim Sum breakfast; Learn to create Dim Sum and the Art of Chinese BBQ; enjoy lunch with a lecture on The Art of Tea; expand your knowledge of Asian traditions like artful garnishing and food carving.

Prepare your own inspired dishes for a gala dinner.

Evening: You and your classmates will share and enjoy your creations during a fun-filled party at CAC’s SensAsian Restaurant.

3. THE CULINARY TOUR:

 

     Your choice of a 2 or 6-day culinary and cultural tour, guided by a culinary expert.

     Day 8 – (B,L,D) Breakfast; Travel to Hong Kong, the exciting East-meets-West epicenter of the culinary world. Enjoy a Chinese vegetarian lunch; Tour Hong Kong Island including the Peak and Southside of the island, then shop at Stanley Market; Seafood Dinner on Lama Island with a sunset cruise.

    Day 9 – (B,L) Breakfast; Tour of famous Hong Kong restaurant grounds - Hsin Kwong Group; Your chance to explore Hong Kong island and Kowloon by using the city’s very efficient transportation, MTR, to see places like Central, Soho, Wanchai, Causeway Bay, Flower Market and Bird Market; No host dinner and we suggest experiencing the Hong Kong style Diner.

    Day 10 – (B,L,D) Depart for USA from HK or

Breakfast; Discover legendary Xian, China’s ancient capitol (via flight to Beijing, layover and continuing flight to Xian). Lunch at the airport. Enjoy dinner and an electrifying theatre performance; tour intriguing Moslem street.

    Day 11 – (B,L,D) Breakfast; Visit The Museum of Terracotta Warriors and Horses. Tour Big Wild Goose Pagoda; walk along an Ancient City Wall … the only one in China with an intact Moat; see chefs prepare an amazing dumpling banquet, learn to make dumplings yourself and enjoy a Dumpling Banquet Dinner in this city famous for its “table delicacies.”

    Day 12 – (B,L,D) Breakfast; Morning flight to Beijing, China’s capitol and cultural and culinary center. Visit Tiananmen; lunch; Forbidden City. Enjoy a Peking duck dinner and a performance by Beijing’s stunning, world famous acrobats.

    Day 13 – (B,L) Breakfast; Tour Beijing’s traditional district, the Hu Tong. Visit markets and experience a home-cooked lunch. Visit China’s famous Great Wall and get a sneak peek of the 2008 Olympic site. Experience Imperial Dinner.

    Day 14 - Depart for USA from HK
